Today, Chef Eric demonstrated how to make delicious Maryland Style Crab Cakes – Yummy!
012_Toscana Cooking Class
* Jumbo lump crab meat – 1 pound
* Mayonnaise – ¼ cup
* Lemon; zest and juice – 1 each
* Panko breadcrumbs – 2 tablespoons

* In a small mixing bowl add mayonnaise and lemon zest and juice stir
to combine

* In another small bowl add crab meat, do not squeeze the juice out or
break up the crab meat

* Gently fold the mayonnaise and lemon mix into the crab meat being
very careful to not break up the meat

* Add Panko and combine

* Set in the cooler for 20 mins to let the panko absorb some of the

* Portion into 1 ounce portions

* Sauté until golden brown


And what goes well with Crab Cakes?  A nice Chardonnay or two or three…
